Torremaggiore’s Peranzana table olive: traditional agro-alimentary product.
The Peranzana is a dual purpose cultivar, this means that it is exceptional for producing oil and at the same time it is a tasty table olive.
After a selection of the largest and most mature fruits and a harvest made strictly by hand, the olives are ready to be stored in brine, where they will remain for a few months before being consumed. A traditional product and an equally typical processing have contributed to the important recognition as a Traditional Agri-Foodstuff, such as “Torremaggiore’s Peranzana table olive. This is the first step in order to gain the PDO which means Protected Designation of Origin’s product.
